Top Food Trends in London for 2024/25: What’s Hot on the Plate – From Fermented Foods to Robot Chefs

Every year we have something exploding onto the London food scene. This year we saw a huge skyrocket of smash-burger spots, pubs taking over the food scene (we’re looking at you The Devonshire), and farm to table dining. 


We knew we had to think about what’s next for London’s food scene, whether it’s something that’s slowly bubbling in the background or a trend that is consistently booming. 


Fermented Foods & Gut Health: The Next Big Trend in London’s Dining Scene:

While this isn’t anything new, it seems  that everything pickled is going to grow massively in the next few months with restaurants making gut-conscious dishes for their diners. Think kimchi, miso, kombucha, and any and all pickles! Gut health has taken social media by storm and it’ll definitely impact the dining scene as people become more mindful about what they eat.

Sustainable & Climate-Conscious Eating: London Restaurants Embrace Eco-Friendly Menus:

Many restaurants are turning to planet friendly eating where they’re low in carbon emissions and water usage. Restaurants are upcycling their ingredients to make snacks and products that would have otherwise gone to waste. Some are even using foraged foods in the kitchen, take a look at Annwn in Wales!


Automation in London Restaurants: AI, Robot Chefs, and Ghost Kitchens:

Imagine less chefs, more robots. It’s looking like there could be a  huge spike in companies using automation and tech when it comes to food prep, AI powered drive-thrus, and even robot chefs (which is a bit crazy to think about). Cloud or "ghost" kitchens - kitchens that prepare food solely for delivery - are often fully automated and are becoming even more popular. These kitchens use robotic cooking technology and AI to manage orders, inventory, and delivery schedules efficiently.


Global and Bold Flavours: Exploring Spicy and Fusion Cuisines in London’s Food Scene:

Consumers are increasingly seeking out unique, spicy, and complex flavours from around the world. There’s a huge upsurge in North African cuisine with ingredients like harissa, dukkah, and tahini. As well as different spices like gochujang and Sichuan peppercorns. There’s also been an increase in fusion spots that blend together completely different flavours that work surprisingly well together like Japanese and Mexican, Los Mochis is a great spot for that. We’ll be seeing a lot more fusion, not only in the cuisine but also in the flavours of the food being made, especially the sweet and spicy combo like hot honey.
